RESPONSIBILITIES

Guests

You will help to create exceptional experiences for our guests by:

  • Ensuring that the quality of food produced by yourself and other chefs in your section is consistent with menu cards/recipes and is always of the highest standard.
  • Having the ability to tailor our dishes to individual client needs whenever requested.
  • Adapting our menus to cater to allergies and special dietary requirements – good knowledge of allergies and food components.
  • Ensure every guest feels cared for, valued, and respected – every guest, every time.
  • Always always use your initiative and empowerment guidelines, making it right for our guests, replacing and offering alternatives if required and without question.
  • Regularly check operational and kitchen shift log books, ensure all client/guest activity is noted, and follow up on your shift.
  • Ensuring that you have excellent product knowledge so that you can give our clients the best service and advice possible.
  • Exhibit hospitality to the team.
  • Collaborate with other departments, particularly Event Sales, Event Operations, and other Food and Beverage Outlets, so our Guest experience is as seamless as possible.
  • Bring any deficiencies in equipment to the attention of the Executive Chef or your immediate supervisor to ensure that the kitchen team has the correct equipment at their disposal to deliver exceptional service to every guest every time.
  • Contributing to ways to increase the client perception of value to enhance their experience – recognizing our regular clients.
  • Ensuring that the highest hygiene standards are maintained for the safety of our guests and reputation.

Team

As Chef de Partie, you will help ensure that the work environment is safe, happy, and productive by:

  • Overseeing your section and monitoring the quality of output and production.
  • Ability to run the kitchen in the absence of the Sous Chef/Chef de Cuisine on his/her days off and run the kitchen on your own through periods of annual leave and other absences.
  • Consistently train and retrain apprentices and demi/commis chefs on your team to produce excellence and consistency.
  • Contributing to communication to improve and maintain results as needed.
  • Help to oversee the Team Restaurant, ensuring the food was continually topped up and fresh.
  • Working within a team to produce consistently excellent food.
  • Ensuring that new or existing team members are trained and upskilled in current practices or skills
  • Attending communication meetings.
  • Being aware of wastage – food/energy etc., and minimizing.
  • Assisting with ordering or additional duties as required, e.g., Butchery etc.
  • Being flexible about where and when you work, within reasonable expectations

Occupational Safety and Health

  • Keep your work area safe, clean, and tidy.
  • Accept and abide by the intent and instruction of the OSH Commitment.
  • Participating in OSH consultative meetings relevant to your department, emergency response rehearsals, and reviews
  • Report immediately to your direct supervisor any hazards that may cause injury, ill health, or damage, and actively participate in programs undertaken to eliminate or control such hazards to the extent you are authorized and/or qualified.
  • Report immediately all incidents and near misses– no matter how small to your direct supervisor
  • Undertake all training in safe work practices, system requirements, and, where necessary, re-training
  • Participate and cooperate in our rehabilitation and return to work program if injured.
  • Wear and maintain all personal protective equipment (PPE) as required by your job or work environment.
  • Cooperate with Parmelia Hilton Perth regarding any requirement that is enforced in the interests of health, safety, and welfare at work.

What are we seeking?

  • Commercial Cookery Cert IV or above
  • Minimum 1 year experience in similar role and minimum 1 year in commercial hospitality
  • Strong English communication
  • Confident leadership abilities
  • Knowledgeable in HACCP
  • Reliable and works well under pressure
  • Skilled in time management and organization
  • Ability to work in hot environments and stand on feet for long periods
